This Vegan Chow Mein Recipe is quick and easy, and comes with lots of extra veggies to add in (or swap out for the veggies you don’t have).

Plus, one serving is huge, it’s over 2 cups, and this meal can also be made in just 20 minutes! See my tips below on managing your time while cooking.

If you want to boost the protein, you can add in some tofu. But I wanted to make this recipe extra easy and straight forward. So it’s just a homemade vegan sauce, noodles, and yummy veggies.

Vegetarian Chow Mein Ingredients

I know that not everyone loves every vegetable out there, and sometimes a specific veggie is hard to find or too expensive. So I wanted to include this list of optional veggies. You can add them in to bulk up your veggie chow main, or use them to swap out an ingredient you don’t want to use.

Ingredients for Vegan Chow Mein:

  • ¼cupvegan mushroom oyster sauce
  • 1tablespoonsoy sauce(or Tamiri)
  • 3clovesgarlic
  • 2teaspoonsfresh ginger
  • 1teaspoonSriracha
  • 10-ouncesYakisoba noodles, Udon Noodles, or whole wheat spaghetti
  • ½teaspoonpepper
  • Olive oil spray
  • 1yellow onion
  • 1red bell pepper
  • 1cupsnow peasor snap peas
  • 2green onions

How to Make Vegan Chow Mein

I like to make the sauce, slice and cook the veggies while the pot of noodles is cooking. This means I can get dinner on the table in just 20 minute.

You can also make the noodles ahead of time and refrigerate them, but I do recommend tossing them in a little bit of olive oil so they don’t stick together if you do that.

How to Make Vegan Chow Mein:

  1. Cook the noodles according to the direction on package. In the meantime, make the sauce and cook the veggies.
  2. In a small bowl, whisk together mushroom oyster sauce, soy sauce, garlic, ginger and Sriracha and set aside.
  3. Heat a large skillet over medium high heat. Spray with olive oil and add in the onion, bell peppers, and snow peas. Cook for 5 minutes, stirring often, until the veggies start to soften.
  4. Add cooked noodles and cook for 3 more minutes.
  5. Stir in the prepared sauce, and remove from heat.
  6. Top with green onions and serve hot.

This veggie chow mein is easy to make in just 20 minutes, and is packed with flavor.

I like to get vegan mushroom oyster sauce for this recipe. But you could also make your own if you prefer.

Special Tip: You can get creative with the veggies, add in (or swap for a veggie you don't like) celery, wok chop, water chestnuts. And even add in some tofu if you like.

Ingredients

  • ¼ cup vegan mushroom oyster sauce
